古田縣的街頭，有點像咱們的Pasar Malam，有許多攤口，不少是具當地特色口味的小食；
Around the Kutian street, just like Pasar Malam, a lot of stalls selling anything and offers a lot of foods and so on The Potato Mee is among one of them. We took a lot of photos and taste it in order to write a book about the traditional Foochow flavor!

我還是第一次知道“古田人”，算是福建還是福州人？
百年前，福州市有十邑（縣），古田縣是其中一縣，所以是操福州語系的。
不過，1970年因為行政劃分歸屬寧德市，不再由福州市管轄；但是古田人與屏南人都是福州人。
福州是市，也是福建省會，所以福州人也是福建人。
福建省共有6大語系，包括福州人（話）、興化人（話）、閩南人（話）、閩北人（話）、客家人（話）及龍岩人（話）。
講到福建人就是指上述的人，福建話也是那六種話；但因為閩南的漳泉人（廈門一帶）移民較早，最初被問是那裡人，答：福建人或福建話指是閩南話或廈門話。因此閩南人（話）或廈門人（話）被當是福建人或福建話。事實，這是錯誤的，因為福州人是福建人，興化人是福建人，客家人是福建人，閩南人是福建人......
